Lemon Mint and Tarragon Shrimp Pasta Salad
1/3 cup canola oil
3 tablespoons chopped fresh mint
1 tablespoon chopped fresh tarragon
1 tablespoon honey mustard
1 teaspoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon salt
1/2 teaspoon dried crushed red pepper
8 ounces medium shell pasta, cooked
1 pound peeled and cooked shrimp
1 large peach, cut into thin wedges
1 cup chopped seedless cucumber
1/4 cup fresh raspberries
In a medium bowl, whisk all the dressing ingredients together well. Let sit for 10 minutes. In a large bowl, toss the pasta with dressing. Stir in the shrimp, peach, and cucumber. Garnish with raspberries. Serve immediately.
